Gouda Fondue with Grilled Hanger Steak

Reduce heavy cream in a pot over medium heat until reduced by half. Add Gouda and continue cooking until cheese is melted and fondue has thickened. Strain fondue through a fine-mesh strainer to remove any lumps of unmelted cheese. Hold in a warm place until ready to serve.
Heat a wide pot over high heat. Add olive oil and heat until oil shimmers in bottom of pan. Add onions and salt and cook over high heat for 15 to 20 minutes, until onions take on a rich, dark color, stirring every couple minutes to avoid burning bottom of pan.
Turn off heat and add vinegar. Stir and taste onions and add more salt or vinegar to taste.
To serve, spoon warm onions onto a warm plate and drizzle generously with fondue. Serve immediately with side of grilled steak.
